Cookin’ Greens Chopped Spinach & Chocolate Muffins

Who doesn’t love chocolate muffins?  This recipe features spinach, black beans and applesauce. Aside from being vegan, the recipe is also gluten-free and refined-sugar free. The Cookin’ Greens spinach is undetectable in terms of spinach flavour, but evident in the added moisture.

Ingredients
  1. ½ cup (125ml) Cookin’ Greens Chopped Spinach
  2. ½ cup (125ml) canned black beans, rinsed
  3. ½ cup (125ml) applesauce
  4. ¾ cup all-purpose gluten-free flour
  5. ½ tsp (2ml) xanthan gum
  6. ¾ cup dark chocolate cocoa powder
  7. 1/3 tbsp baking powder
  8. 2/3 cup agave
  9. 1 egg replacement (= 2 tbsp water + 1 tbsp olive oil + 2 tsp baking powder)
  10. 3 tbsp (45ml) coffee, freshly brewed and hot
  11. ½ tsp (2ml) vanilla extract
  12. ½ cup (125ml) dairy-free chocolate chips
Instructions
  1. Preheat the oven to 350˚F
  2. Combine apple sauce, black beans, and spinach in food processer until creamy
  3. Place flour, xanthan gum, cocoa, and baking powder in a separate bowl, and mix until well-combined
  4. Add egg replacement and agave into another bowl, mix, and then coffee and mix.
  5. Mix “egg,” agave and coffee mixture into the spinach, black bean and applesauce mixture and combine.
  6. Add the dry ingredients to the wet ingredients and mix until well combined
  7. Mix in chocolate chips
  8. Add batter into muffin tin (I oiled the well instead of using muffin cups, but you can do either)
  9. Bake for 16-18 minutes
