Cookin’ Greens Breakfast Pizza

This healthy and hearty pizza was inspired by Arlene Dickinson. The eggs on the top are a fun use of a breakfast ingredient and show you just how versatile pizza can be!

Serve with sliced tomatoes, yogurt, and fresh ground pepper. Hot sauce on the side is a must for those who like things a little zippy. Topped with Cookin’ Greens, you’ve got a breakfast fit enough for a dragon.

Ingredients
  1. 1 ½ cups (300g) of any Cookin’ Greens product
  2. 1 large whole wheat pita
  3. 3-4 eggs
  4. ½ cup shredded (120ml) old cheddar or mozzarella
  5. 2 tbsp of olive oil (30ml)
  6. Salt and pepper to taste
Instructions
  1. In a skillet, heat 2 tbsp (30ml) of olive oil over medium heat. Sauté Cookin’ Greens for 5-7 minutes, until heated through.
  2. Preheat the oven to 400.
  3. Place pita in a large oven proof skillet, top with cooked Cookin’ Greens. Using the back of a spoon, make small indents in greens for eggs to sit. Crack eggs into each indentation.
  4. Bake for 20 minutes or until egg whites are set. If bottom is cooking too quickly, turn broiler on and leave oven door open a crack.
  5. Cook eggs until desired consistency.
  6. Top with cheese, cook for an additional 2minutes.

  1. Low Calorie: ** Use 1 egg per person and a low fat cheese, load up on veggies!
  2. Gluten Free: ** Use a gluten free pita
  3. Dairy Free: ** Use a dairy-free cheese or remove cheese and add more veggies, season with herbs if desired!
