Cookin’ Greens Veggie Soup

One of the most basic soups to make is a vegetable dish. It’s a comforting dish and an easy solution to help you use up the veggies you don’t know what to do with in your fridge. Easy on you and your stomach -cooked vegetables are easy to digest and high in fibre!

Ingredients
  1. 1 bag (500g) Cookin’ Greens Athlete’s Mix
  2. 1 carrot, peeled, diced
  3. 1 leek, washed well, sliced into rounds
  4. 1 zucchini, diced
  5. 1 cup fennel, stems and all
  6. 1 celery stalk, diced
  7. 1 potato
  8. 1 bay leaf
  9. 12 cups (2 L) chicken or vegetable broth (homemade preferably)
  10. 2 tbsp.(15ml) extra virgin olive oil
  11. Salt to taste
Instructions
  1. Place all ingredients into a large pot. Bring to a boil. Skim off any foam that rises.
  2. Reduce heat to medium low, cover with a lid slightly ajar and cook for 40 min or until carrot can be easily pierced.
  3. Pour into bowls and Enjoy!
