Cookin’ Greens Stuffed Mushrooms

These stuffed mushrooms are really easy to whip up, and make for a great appetizer or side dish. The addition of egg makes this dish suitable for a brunch idea as well. Our Chopped Spinach and Leeks add a heartiness, while these mushrooms are flavoured well with cheese, nutmeg, salt and pepper.

Ingredients
  1. 2 cups (200g) Cookin’ Greens Chopped Spinach
  2. 1 tbsp. (15 ml) olive oil
  3. 1/3 cup (40g) leeks
  4. 2 large egg whites, beaten
  5. ½ cup (125ml) seasoned bread crumbs
  6. ½ cup (125ml) feta cheese
  7. 1/8 tsp (1ml) ground nutmeg
  8. 18-20 medium mushrooms, stems removed; 1 ½ – 2 in. diameter
  9. Salt and pepper to taste
Instructions
  1. Preheat oven to 350F. Use a non-stick baking sheet
  2. In a non-stick skillet, heat the olive oil over a medium high heat. Add leeks and sauté for 5 minutes or until soft. Add Cookin’ Greens Chopped Spinach and heat through for 2 minutes
  3. Transfer to a large bowl and stir in egg whites, bread crumbs, feta cheese, and nutmeg. Add salt and pepper. Stir to combine
  4. Stuff each mushroom with 1 tablespoon of the spinach mixture
  5. Place mushrooms cap size down on the non-stick baking sheet. Bake for 15 minutes or until soft.
