Cookin’ Greens Spinach and Lentil Soup

This soup is savory dish seasoned with cumin and a touch of cayenne pepper.

Ingredients
  1. 2 cups (200 g) of any Cookin’ Greens product, we recommend Cookin’ Greens Chopped Spinach
  2. 2-3 tbsp (30-45 ml) olive oil or vegetable oil
  3. 2 garlic gloves, 2 tsp (10ml)
  4. 1/2 cup (125 ml) thinly sliced onion
  5. 1/2 tsp (2 ml) cumin
  6. 1/4 tsp (1 ml) cayenne pepper
  7. 2 cups (500 ml) vegetable or chicken stock,
  8. 1 cup (250 ml) canned lentils
Instructions
  1. Heat oil in medium size pot: add garlic, stir 30 seconds, add onion, cumin, cayenne. Stir. Cook for 3 minutes on medium heat.
  2. Add Cookin’ Greens Spinach. Cook 2 minutes. Add 2 cups stock, lentils. Simmer for 5 minutes, and serve.
