Cookin’ Greens Curried Potatoes

 “Curry” is a collective term for a group of spices used in Indian, southeast Asian and Middle Eastern cuisine. One of its major constituents is turmeric- which has health properties that are anti-inflammatory and anti-cancer.

This dish is bold with the flavour of curry, yet makes for a comforting side dish paired with lamb or fish. As a vegetarian option, add some chickpeas.

Ingredients
  1. 2 cups (200g) Cookin’ Greens Chopped Kale or Spinach
  2. 1lb (454 mL) potatoes, peeled, cut into ½” cubes
  3. 2 tbsp (30 mL) olive oil
  4. 1 tbsp (15 mL) garlic, chopped
  5. 1 cup (250 mL) onions, finely chopped
  6. 1 tbsp (15 mL) mild curry powder
  7. 1 tbsp (15 mL) lime juice
  8. Salt & pepper to taste
Instructions
  1. Place potatoes in medium-sized pot of water. Bring to boil over high heat. Reduce heat, cover and simmer 8-10 minutes until tender. Drain, set aside. Heat large skillet over medium heat.
  2. Add oil and garlic; sauté for 30 seconds. Add onions. Sauté on medium heat for 5 minutes until vegetables soften. Add curry powder. Stir well.
  3. Add frozen Cookin' Greens. Sauté 5-7 minutes on low heat, stirring frequently. Add potatoes. Heat through, season to taste with salt and pepper. Squeeze lime juice over potatoes and greens.
