Ingredients
  1. 1 bag (500g) Cookin’ Greens Chopped Kale
  2. 1 tbsp (15ml) sesame oil
  3. 1 clove garlic, 1 tsp (5ml), minced
  4. ½ cup (125ml) shiitake mushrooms, thinly sliced
  5. 1 cup (250ml) chopped or shredded purple cabbage
  6. 1 cup (250ml) canned chickpeas, drained and rinsed
  7. 1 green onion, thinly sliced
  8. ½ tsp (2.5ml) sesame seeds
  9. 2 tbsp (15ml) rice vinegar
  10. 1 tsp (5ml) fresh lime juice
  11. 1 tsp (5ml) honey
  12. 1 tsp (5ml) soy sauce
  13. ½ tsp (2.5ml) finely diced fresh ginger
  14. 1/8 tsp (1ml) dried red chilli flakes or cayenne pepper
Instructions
  1. Heat oil in a large wok or saucepan over medium heat. Add garlic and sauté for 30 seconds, stirring constantly.
  2. Add mushrooms and Cookin’ Greens Chopped Kale. Cook for 5 minutes or until soft
  3. Add cabbage, chickpeas, green onion and sesame seeds. Cook for 2 minutes.
  4. In a small bowl, combine vinegar, lime juice, honey, soy sauce, ginger and red chilli flakes. Stir to combine. Add to vegetable mixture.
  5. Continue to cook for 5 more minutes or until mixture has absorbed wet ingredients.
  6. Serve on its own, with pasta or in a wrap.
