Cookin’ Greens Chopped Kale Pesto

Most people opt to buy pesto from a store. But in fact, it’s something that you can make much more cheaply at home and you can add kale or spinach for an extra kick of nutrition!  Enjoy pesto with some pasta, scrambled eggs, lasagna, bruschetta, and more!

Ingredients
  1. 1 ½ cups (150g) of Cookin’ Greens Chopped Kale or Cookin’ Greens Chopped Spinach
  2. ¾ cup (75ml) Olive Oil
  3. ½ cup (125ml) of vegan parmesan (see recipe below)
  4. ¼ cup (125ml) of pine nuts
  5. 2 garlic cloves, 2 tsp (10ml)
  6. ½ cup of basil
  7. Vegan Parmesan Ingredients
  8. 1 cup (250ml) cashews, unsalted
  9. 4 tsp nutritional yeast
  10. 1/3 tsp garlic salt
Instructions
  1. Place all pesto ingredients in a food processer and blend until well combined
  2. Store in the fridge
  3. ** Blend vegan parmesan separately and sprinkle on top
