- 1 ½ cups (150g) of Cookin’ Greens Chopped Kale or Cookin’ Greens Chopped Spinach
- ¾ cup (75ml) Olive Oil
- ½ cup (125ml) of vegan parmesan (see recipe below)
- ¼ cup (125ml) of pine nuts
- 2 garlic cloves, 2 tsp (10ml)
- ½ cup of basil
- Vegan Parmesan Ingredients
- 1 cup (250ml) cashews, unsalted
- 4 tsp nutritional yeast
- 1/3 tsp garlic salt
- Place all pesto ingredients in a food processer and blend until well combined
- Store in the fridge
- ** Blend vegan parmesan separately and sprinkle on top
