Cookin’ Greens TexMex Cream of Corn Soup

This texmex style of soup is high in fibre and nutrients thanks to all the corn – it has a creamy texture and a gentle savory flavour. Enjoy with some chilies or freshly chopped parsley on top.

Ingredients
  1. 3 cup (750ml) frozen Organic Kale, Corn & Peas Blend
  2. 1 small onion, minced
  3. 1 tsp (5ml) chili powder
  4. 1 bay leaf
  5. 1 tbsp (15ml) chopped parsley
  6. 3 tbsp (15ml) corn flour
  7. 1 cup (250ml) almond milk unsweetened or milk of your choice
  8. 1 cup (250ml) culinary coconut milk
  9. 2 cup (500ml) vegetable broth
  10. 398ml can cream style corn
  11. Salt and pepper to taste
Instructions
  1. In a medium preheated pot add oil and sauté onion, chili powder, bay leaf and parsley for 1 min.
  2. Add corn flour, stir to cook for a few seconds. Slowly pour in the almond milk, whisking to thicken slightly.
  3. Add remaining liquids, frozen Organic Kale, Corn & Peas. Bring to a boil. Skim off any foam.
  4. Lower the heat to medium, to a strong simmer and cook for another 5 min. Scoop out half of the soup and puree to thicken the soup.Serve and Enjoy!
