Cookin’ Greens Risotto

Risotto is a North Italian rice dish cooked in a broth to a creamy consistency. The creamy broth in this dish is derived  from our Cookin’ Greens, white wine, and vegetable stock. Enjoy this dish with a side of flaky white fish or a shrimp skewer.

Ingredients
  1. 2 cups (200g) Cookin’ Greens product of your choice
  2. 4 tbsp (60ml) butter or olive oil
  3. 1 small onion (60-70g), minced
  4. 1/2 cup (125ml) dry white wine
  5. 1 1/2 cups Arborio Rice (short grain rice)
  6. 5 cups (1.25 L) chicken or vegetable stock
  7. 1/4 cup (60ml) Parmesan Cheese
  8. Salt and pepper to taste
Instructions
  1. In a large saucepan melt 2 tbsp of butter over medium heat, sauté onion until it softens (3-5 minutes)
  2. Add the rest of the butter, Cookin’ Greens and rice.
  3. Stir until the rice is coated with butter. Add the wine. Raise heat to medium high.
  4. Begin to add the stock, 1/2 cup at a time, stirring after each addition. When absorbed, add more.
  5. It will take up to 30 minutes for the rice to absorb the stock. Add salt, pepper, parmesan. Stir and serve.
