- 2 cups (200g) Cookin’ Greens product of your choice
- 4 tbsp (60ml) butter or olive oil
- 1 small onion (60-70g), minced
- 1/2 cup (125ml) dry white wine
- 1 1/2 cups Arborio Rice (short grain rice)
- 5 cups (1.25 L) chicken or vegetable stock
- 1/4 cup (60ml) Parmesan Cheese
- Salt and pepper to taste
- In a large saucepan melt 2 tbsp of butter over medium heat, sauté onion until it softens (3-5 minutes)
- Add the rest of the butter, Cookin’ Greens and rice.
- Stir until the rice is coated with butter. Add the wine. Raise heat to medium high.
- Begin to add the stock, 1/2 cup at a time, stirring after each addition. When absorbed, add more.
- It will take up to 30 minutes for the rice to absorb the stock. Add salt, pepper, parmesan. Stir and serve.
