Cookin’ Greens Sumptuous Spinach Brownies

- 1 cup (100g) Cookin' Greens Chopped Spinach or Chopped Kale
- 3/4 cup (135g) semisweet chocolate chips
- 3 tbsp (90ml) unsalted butter
- 2 large eggs
- 1/3 cup (113 g) agave or ½ cup (100g) sugar
- 1 tbsp (15ml) vanilla extract
- 1/3 cup (113g) prune puree *
- 1 tbsp (15g) flaxseed powder
- 1 tbsp (15g) wheat germ
- 3 tbsp (45g) whole wheat flour
- ¼ cup (21g) quick cook rolled oats
- 2 tbsp (12g) unsweetened cocoa powder
- ¼ tsp (1.5g) salt
- Preheat oven to 350 ゚ F. Cover bottom of 8x8 inch square pan with cooking spray. Steam or boil the Cookin' Greens spinach (do not add water). Drain cooked spinach only if required.
- Puree cooled spinach in food processor or blender with *prune puree, and set aside. (*You can substitute prune for pureed raspberries or blueberries 1/3 cup /113 g)
- Melt chocolate chips and butter in a double boiler. Stir well and remove mixture from heat and cool. In a large bowl, combine eggs, agave, vanilla, the spinach/prune puree and the chocolate mixture. Combine flaxseed powder, wheat germ, flour and rolled outs and grind in food processor or coffee grinder until fine. Place in small mixing bowl, and add cocoa powder and salt.
- Stir until well mixed. Add to the chocolate mixture and hand stir thoroughly. Pour entire mixture into prepared baking pan.
- Bake 18-22 minutes, until a toothpick comes out clean. Allow pan to cool completely before cutting.
