Cookin’ Greens Hamburger Sloppy Joes with Kale

An every-day fun meal solution for the entire family but particularly  for kids– a perfect blend of savoury and a hint of sweetness.

 As a vegetarian option, use tempeh, a fermented soy protein in place of hamburger meat.

Ingredients
  1. 1 bag (500g) of Cookin’ Greens Chopped Kale
  2. 4 Tbsp (60ml) olive oil
  3. 1 lb lean hamburger meat (*substitute with ground turkey, chicken, veal)
  4. 2 tbsp (30ml) olive oil
  5. 2 cloves garlic , 2 tsp (10ml), minced
  6. 1 large onion , thinly sliced
  7. 1 can tomato paste, (5 1/2 oz)
  8. 2 1/2 cups (375ml) vegetable stock (or low sodium chicken stock)
  9. ¼ cup (60ml) red wine vinegar
  10. ¼ cup (60ml) sweet fancy molasses
Instructions
  1. Heat 2 tbsp of oil in wok or frying pan. Sauté meat for 8-10 minutes or until meat is evenly cooked through. Drain and reserve.
  2. Clean wok, add remaining 2 tbsp of oil on medium heat. Add garlic, sauté for 30 seconds, add onion. Cook, stirring occasionally for 5 minutes or until onion has softened. Add Cookin’ Greens Chopped Kale. Sauté for 5 minutes on medium- low heat, stirring often.
  3. Add tomato paste, stock, vinegar, molasses, tamari and mustard. Simmer for 10 minutes. 4. Add chili powder and hamburger meat to mixture. Simmer for 5 minutes more. Serve on top of hamburger buns or soft roll of choice, noodles or rice.

  1. Low Calorie: **Try using extra lean hamburger meat and an open-faced sloppy joe. You may also like to try the vegetarian option which is lower in calories.
