Cookin’ Greens Chopped Spinach Cashew Pate

Serve this paté as a garnish on pasta and  on crackers to serve as an appetizer. This is a  great meal addition – simple to make, yet with a semblance of sophistication and planning due to all of the diverse flavours and colours.

Ingredients
  1. ½ cup (50g) Cookin’ Greens Chopped Spinach
  2. 1 cup (250ml) cashews, soaked
  3. 1/3 cup nutritional yeast
  4. 1 garlic clove, 1 tsp (5ml)
  5. ¼ cup (60ml) lemon juice
  6. 3-5 fresh basil leaves
Instructions
  1. Soak the cashews in water for 2-4 hours
  2. Place all ingredients in a food processor and blend until creamy
  3. Serve as a spread for crackers, in a sandwich, or on pasta
