Cookin’ Greens Tortellini and Spinach

Don’t we all love tortellini?  Use any flavored tortellini or ravioli in this recipe. Cookin’ Greens Chopped Spinach and the chopped carrots add color, flavor and nutrition to this simple pasta dish.

Ingredients
  1. 1 bag (500g) Cookin' Greens Chopped Spinach
  2. 8 cups (1 L) Chicken or Vegetable Stock
  3. 2 carrots sliced into ¼ inch rings
  4. 1 medium onion, thinly sliced
  5. 1 pound (454g) Tortellini
  6. 2 tbsp (15ml) parsley, minced
  7. Salt and pepper to taste
Instructions
  1. Bring stock to boil. Lower heat. Add carrots and onion. Simmer for 10 minutes.
  2. Bring a large pot of water to boil .Add tortellini. Cook according to package directions. Drain.
  3. Add Cookin' Greens to simmering stock. Add cooked tortellini, salt and pepper. Simmer for 3 minutes.
  4. Serve, garnish with parsley
