Cookin’ Greens Thai Coconut Shrimp with Basmati Rice

This Thai dish has a delicious creamy  coconut milk and curry paste sauce, the peas add a crunch while the greens of your choice add that nutritional punch while soaking up the flavourful sauce. Add a squeeze of lime for the traditional Thai experience!

Ingredients
  1. 1 cup (100g) Cookin’ Greens product of your choice
  2. 1 can (14 oz) coconut milk
  3. 1 tbsp (15ml) Thai Red Curry Paste
  4. 1 tsp (5ml) Thai Fish Sauce
  5. 1 small red pepper, diced
  6. 1 cup (250ml) frozen peas
  7. 3 cups (750ml) cooked basmati rice (about 1 1/2 cups dry)
  8. 1 lb shrimp, peeled and cleaned
  9. 1 tbsp (15ml) chives, thinly sliced
  10. 1 lime, sliced in half or quartered
Instructions
  1. In a large skillet, blend the coconut milk and curry paste .Add Thai fish sauce. Add bell pepper
  2. Bring to a boil over medium high heat. Stir in the peas, Cookin’ Greens and cooked rice
  3. When the mixture returns to a boil, add the shrimp. Continue cooking and stirring until rice is warm and shrimp turn pink, about 3 minutes
  4. Stir in the chives. Serve in bowls with lime wedges.
